That is exactly how I felt about Carlo. While Carlo hasn’t exactly just arrived on the scene, ever since the second location opened in Vienna’s city center, it seems like all of Vienna is suddenly talking about nothing else. And let’s be honest: is there a better time to try out a new Viennese ice cream parlor than in the middle of a heatwave?
So, on a relaxed Sunday, my husband and I spontaneously decided to pay a visit to the new Carlo. The temperatures hovered somewhere between “summer in Vienna” and “I’d really just like to live inside an air-conditioned fridge.” But, after all, days like that are made for ice cream. And sometimes, you don’t need much for a lovely afternoon. A stroll through the city center, some quality time together, and an exceptional ice cream can spark a surprising amount of summer happiness.

You walk in, and your gaze is immediately drawn to the flavors. And that is exactly where the real experience begins.
While many classic ice cream parlors stick to the usual suspects, Carlo takes a much more creative approach. Of course, you’ll find familiar flavors too, but the real strength lies in the extraordinary creations.
One look at the display case was all it took for me to understand why this new ice cream parlor in Vienna is generating so much hype right now.
The funniest observation

Before we could even place our order, a scene unfolded that still makes me smile today.
Standing right in front of us was a couple who clearly weren’t from Vienna. And please don’t get me wrong—I love Austria in all its facets. But sometimes I feel like city dwellers and country folk are practically two different nations. That difference became especially apparent in front of Carlo’s display case. While my husband and I were immediately excited, studying every single flavor and debating which crazy combination to try, the couple ahead of us looked visibly overwhelmed by the selection.

“What even is that?” “How do you pronounce that?” “Is that edible?” It was delightful. We, on the other hand, immediately switched into explorer mode. After all, that’s exactly why you go to a special Viennese ice cream parlor—not to order vanilla for the hundredth time, but to try something new.

Instead, you get the impression that the people working here really put thought into flavor. And that is exactly why Carlo stands out from so many other places for me. If you prefer classic flavors, you’ll certainly find what you’re looking for here, too. But if you enjoy discovering something new, you’ll likely find yourself standing at the counter much longer than planned. That’s certainly what happened to me.
After giving it some thought, I finally decided on „Dio Mio.“
The name alone had piqued my curiosity. The flavor is a blend of Greek yogurt and lime—and let me tell you, it was the perfect choice. With temperatures soaring well above 30 degrees, I didn’t want anything heavy or rich. I needed something fresh.
Something that felt like summer. Something that wasn’t too sweet. And that’s exactly what Dio Mio was. The Greek yogurt provided a pleasant creaminess, while the lime added a wonderful freshness. The result was light, balanced, and incredibly refreshing. As we strolled through the city center, I realized that it’s flavors like this that make all the difference. Of course, I love chocolate. But sometimes, you just want something that perfectly suits a hot summer day. And Dio Mio was ideal for that.

I know. Practically unforgivable for a blogger. But sometimes you just enjoy the moment without thinking about jotting down every single name. What I do remember exactly, though, is that it contained caramelized figs. And that ice cream was incredibly good. Truly incredibly good. Sweet, but not too sweet. Complex, but not complicated. You immediately felt like you were eating something special.
Who needs the exact name, anyway? We’re still talking about that flavor weeks later. And perhaps that says more about the quality at Carlo than any perfect description could.

Sometimes I wonder why we make complicated weekend plans. Of course, I love elegant restaurants. Of course, I love beautiful hotels. Of course, I love all the grand places I regularly write about on vanivanity. But sometimes, a perfect afternoon simply consists of a good ice cream.
Nothing more. Nothing less.
That is exactly what this visit to Carlo felt like. The sun was shining. The city was full of people. The downtown streets felt alive. And we strolled through Vienna with our ice cream. It is precisely these small moments that often stay in our memories longer than the big ones.
The crucial question, of course, is:
Is Carlo really as good as everyone says? My answer is a clear yes. Not because Carlo is the biggest place in town. Not because Carlo feels particularly luxurious. Not because Carlo tries to put on airs. But because Carlo has a clear concept. Because Carlo is creative. Because Carlo delivers quality. Because Carlo puts flavor front and center. And because Carlo manages to do exactly what few places do these days:
People are still talking about it days later.
For me, Carlo is definitely one of the most exciting new openings of the summer.
