Kathi told me she originally ate this dish in Korea, but found it much too heavy there. So she developed a lighter version. It consists of chestnut rice, matcha, soufflé, and pancakes. Served with vanilla ice cream.
I know chestnut rice isn’t for everyone. But I love chestnuts. I really do. I can never get enough of them.
This combination was warm, soft, slightly sweet, with that typical nutty note. And the vanilla ice cream? Perfect balance. My husband had Korean salt bread. A cross between a croissant and brioche. Slightly crispy on the outside, soft on the inside. We had the sweet version – surprise. Before that, he had a little delicacy whose name I can’t for the life of me remember. But it was fluffy, delicate, and disappeared within minutes.
